This all sounds tremendous. Germany is amazing, and the simple fact is that nowhere in Europe is far from anywhere else, so even if you wind up in someplace boring, there are fascinating things close by to go and explore and enjoy. PLUS, you will be in grad school, and working on chewy thinky problems with Smart People from all over the world. That's gonna be some serious fuel for the happy fire. As far as the physics textbook goes, it sounds like you should be participating with the Khan Academy. You could teach a course that was exactly how your physics textbook would be organized and taught, and ask your students to compile your work into a CC-licensed work. Win-win-win-win.
