I've made these twice now - once in australia and once for a friends birthday. They turned out delicious both times but not nearly as nice looking. I also recommend using twice as much alcohol as the recipe calls for. You might want to make extra ganache because it is the most delicious thing alone, on graham crackers, etc. Same for the Baily's frosting but the ganache is really something special.
The frosting is a little harder to deal with because the more Baily's you add, the less fluffy it gets. So if you want it to be fluffy and pretty, use less Baily's. If you want it to be truly alcoholic (like me!) then add more.
