That looks really good. Meatloaf and and KC burnt ends are the two things I crave and can't figure out how to satisfy since I started shying away from meat.

Amy's Kitchen has a frozen vegetarian meatloaf dinner. I doubt it would satisfy a meat lover, so I'm not recommending it. Just in case you were looking for something that wasn't meat but was sort of like meatloaf, that might be an option.

Somewhat. But not enough that I'd end up happier than if I had just decided to eat some falafel. Going out and buying ethically raised would still make me feel shitty.

Ok. I just put it in the oven. It turned out to be falafel only to the degree that the main ingredient before cooking was raw chickpea crumbles. I added some mushrooms too, but otherwise the process was just straight up how I would make the meatloaf I grew up with.

I'm planing on posting it to #grubski at some point this week. I took pictures.

I feel good about this. I'm optimistic. The last time I was this confident about a new recipe, I had to order emergency pizza.

I'm also digging that book you recommended in a different thread. My kindle says I'm 7% through. I was just a smidgen over 2 when the Flowers scandal hit. I'm excited to get into territory that I remember. Thanks for the recommendation.

My thought was that falafel has the texture of meatloaf, but it is meatloaf that's set out all day and is too dry. Need to juicy it up a bit. Somehow.

Just a thought.

If I am going to eat meat, I'm happiest eating wild fish/game of some kind.

If I'm going to eat something raised on a farm, I'm happiest eating something that had a decent quality of life.

I hear animal free meat is the future. Maybe once they perfect it, we'll have a meat especially designed for meat loaf. If so, I'd love to give it a shot.

Long while back when my brothers and I were still in grade school, our mom was/is a health nut. She tried making a frozen chocolate-tofu pudding convincing us it was dessert.

Chocolate and tofu don't mix well, especially in the realm of momma's home cooking'.

Yeah, but what I'm showing you is this stuff that tastes exactly like beef. Turns out a lot of what we like in beef is the Hemoglobin. Heme can be found just about anywhere, so they just amp the heme up in the veg they're using.

edit: I shouldn't say "exactly" like beef. but damn close.
