That looks really good. Meatloaf and and KC burnt ends are the two things I crave and can't figure out how to satisfy since I started shying away from meat.
Ok. I just put it in the oven. It turned out to be falafel only to the degree that the main ingredient before cooking was raw chickpea crumbles. I added some mushrooms too, but otherwise the process was just straight up how I would make the meatloaf I grew up with. I'm planing on posting it to #grubski at some point this week. I took pictures. I feel good about this. I'm optimistic. The last time I was this confident about a new recipe, I had to order emergency pizza. I'm also digging that book you recommended in a different thread. My kindle says I'm 7% through. I was just a smidgen over 2 when the Flowers scandal hit. I'm excited to get into territory that I remember. Thanks for the recommendation.

Yeah, but what I'm showing you is this stuff that tastes exactly like beef. Turns out a lot of what we like in beef is the Hemoglobin. Heme can be found just about anywhere, so they just amp the heme up in the veg they're using. edit: I shouldn't say "exactly" like beef. but damn close.
