Ate dinner with friends and their families, ate too much, did not talk politics, watched stupid youtube videos, had a hilarious talk about Ugg Boots with two of the older parent whom now agree they are ugly footwear. Then had a great conversation with the parents. Not a bad day at all. I even have three days of nothing ahead of me, and one clear night I may drag the gear out and go look at the sky for a while.
I'm thankful for my AmeriCorps experience. I met some genuine, other-centered people that proved to me that a state of giving can be a default. I've been moved by this quote. My sweet potato gnocchi babies (uncooked). Made a new apron last night because my old halter-top apron is fuckin' disgusting. I have so much to be thankful for this year - family, friends, boyfriend, creative outlets, being young and not in debt, and of course, Hubski. Hope everyone is able to find a bit of comfort today.

Didn't use a recipe this time around, BUT I made it with this one last year: http://www.epicurious.com/recipes/food/views/sweet-potato-gnocchi-with-brown-butter-and-sage-233379 If you're curious, here's how I made it this year: Peel/chop sweet potatoes. Boil the fuck out of them in salted water. Once they're mashable, drain and mash in a big ol' bowl. Add butter, some brown sugar, some finely chopped rosemary, some freshly ground black pepper, and a bit of cayenne. Mix. Crack (x) eggs into a bowl. I did 3, but it depends on how many potatoes you used. Mix well. Add flour. Again, it's all about proportions, so just keep adding flour until the dough starts to become more workable. Here is where you would add another egg if it is too tough/not fluffy enough. Put the dough onto a floured surface, and knead flour into it until it no longer sticks to your hands. From here, I just do the same thing as the above recipe. Enjoy!
I'm thankful for my SO putting up with my crazy, my newly secured position at work, my liver... and Hubski of course. 2016 was a trying year. I'm thankful for the shining hope of better things to come.
