I'm a bit iffy on their definition of processed meats. All meats are "processed" before we can eat them, except, I supposed, sushi. I know that's now what they're trying to say, but they don't explain themselves satisfactorily.

You can't expect much in terms of definitions or science out of blogs like this. They have a belief and opinions and they present things that support that worldview. Even sodium nitrite isn't all bad. Biology is complicated, so don't ever believe anyone who puts things so simply.

They talk about MSG as "another dangerous chemical" but there's no reason to believe MSG is harmful at all, when it's actually studied. MSG's bad rap is mostly speculation and fear-mongering.

For sure, I don't turn to wordpress for my science. We've known for a while that too much "bad" meat will hurt your body, and I still eat at least one cheeseburger a week. Whatever.
