I'm having a relaxed morning with a good breakfast and good music. This morning I'm having coffee with a teaspoon of coconut oil in it:
And a bowl of risgrøt, which is a cup of rice with a liter of milk, cooked on low heat for about and hour and half. It makes about 7 cups, enough for 4-5 people. I like mine with salt and butter, my kids add brown sugar and raisins, some people add jam. I usually add a little vanilla extract to the pot while it's cooking, it fills the kitchen with vanilla smell and by the time it's ready to eat, so are we!
This is one of my favorite breakfasts. I think I have many favorite breakfasts. Breakfast is my favorite meal.

A little more than meets the eye to this: Fresh cut hashbrowns (cooked only in copious amounts of extra virgin olive oil); sunny side up eggs with gruyere; and coffe served in a sweet mug that looks like dinosaurs when cold, then changes to only bones when the ink heats up. Throw in some fruit and this is an amazing way to start the day (which is usually at least once a week for me--hash browns take a good thirty minutes to make properly, and I don't always have that kind of time before work).

Doesn't it? I was prepping to fast in order to kick my body into an immune regeneration mode. I read about some folks who drink butter coffee for breakfast during fasting. The oil apparently gives energy without interrupting the process of immune regeneration. I told a colleague at work who is a nutrition fanatic who agreed with the principle, but recommended cocunut oil instead as being healthier than butter. What the hell? I tried it. The coconut oil is hard, so I microwave a teaspoon for 20 seconds, then brew the coffee into it and stir. To my surprise, it tastes pretty darn good. I found on some webmd or similar site that coconut oil is a fad wonderfood that does not deliver on all the promises folks prescribe, but it is one of the healthiest oils. I happen to like coconut, and an oily coconutty coffee is actually quite nice. So, I'm not sold on it being a health drink, but it is interesting and good. I haven't tried coffee with butter yet, I should try tomorrow. It is recommended you use a blender on the coffee and butter to make a well-mixed frothy drink. I'm sure it's better than a hotdog milkshake in any case.
Yes definitely. And stir every 10 or 15 minutes. If it gets too dry, add more milk (or water). And if it's nice and mushy but too wet, just leave the lid off for a bit. It's really easy. Just don't let it burn to the pan. Rice burnt to the bottom of the pot with milk is really bitchy to clean. I'm often up early on a Saturday while the rest of the family sleeps in, so I throw a pot of risgrøt on the stove and by the time folks are up there's a hot meal waiting.

But we've got nicer pans that deal with sticking better. I've definitely got our Saturday morning breakfast planned! That sounds perfect when our kid gets to toddler age, too. A nice cheaper alternative to oatmeal, and meatier alternative to cream of wheat.
Oh - it's the milk fat that makes it so tasty good. So use a half gallon of whole milk. In a pinch, I've used much less milk and used water, or I've mixed water and cream. It's fairly forgiving, but in general the more milk fat the better tasting it's gonna be.
