A friend of mine was shocked that the pasteurization process leaves orange juice flavorless and that scent and flavor particular to a brand of orange juice is later added. Subsequently, he has sworn the stuff off.

I have no problem with people having "revelations" about food, but it does bug me that my friends who grew up in the US really expect that their food is as wholesome as has been advertised, especially when the basics of advertising are well understood.

This is why I purchase frozen concentrate.

It's probably still going to be pasteurized and may still be stored aseptically (further strips away volatile essential oils) at some point and so probably still has "flavor packs" added before sale.

You are probably right, or close to being correct about that stuff. I should do some research on that. All I know is that to me, frozen concentrate tastes better than orange "juice" that costs the equivalent price per gallon.

Well, it doesn't leave it flavorless. It'll still taste like sugar water that's a bit acidic, it just won't taste like orange juice until the reintroduce citrus oils.

If you ever make marmalade I also suggest adding a little citrus oil at the end!

Never made marmalade (is marmalade a jelly or a jam?), but I'll keep that in mind. Where do you get the citrus oil from/how do you extract it?

Well, I'd say it's distinct from both because it includes the peel and has a very distinct flavor whereas between jelly and jam the biggest difference is texture. But closer to jam, since jellies usually just use juice.

You could theoretically press citrus peels, but I just buy the stuff online. You can get cold pressed oil from all kinds of varieties of citrus for pretty cheap (a few dollars per ounce, a ton of servings considering how strong the stuff is) if you look around a bit.
