Coarse grind the coffee in a good grinder. Let it sit for 18-24 hours. Filter it. I filter three times, untill it will flow right through a coffee filter. Dilute to 2 and 1/2 parts cold brew to 1 and 1/2 water. Add some salt to kill off any lingering bitterness and bring out the flavor. Things that make cold brew bad. 1. Over extraction. Leave the ground in too long or an uneven grind with lots of fine grounds which extract more quickly than the rest of the coffee. 2. Water it down too much. 3. Not filtering well (which is really just another way to over extract). I'm making my ice out if large cold brew cubes. I was tossing ideas around with another guy and suggested adding cacao beans to the mix just like they were coffee beans. He tried it before I did an he says it's great.

I started curing 5lbs of pork belly Monday in anticipation of smoking some bacon this weekend. mk and I already set up a bacon-for-beer trade. Looking forward to tasting your handiwork. Not sure how much I'll have, but I wouldn't mind maybe making a side deal for some beans, too, if you're into homemade bacon, that is (pig was raised by this network, if that's a concern of yours).
